But we are also talking about typical regional products such as the lentils from Onano, the white Purgatorio beans from Gradoli, the chickpeas from Valentano which acquire superior characteristics thanks to the fertile, originally volcanic soil of the area and which blend perfectly with the famous olive oils from ancient olive trees of Canino, the most widespread in the area.

All of these products contribute to the top quality of the local cuisine and are skillfully paired with fine fish from the Bolsena Lake, such as the famous Coregone whitefish, a salmonid that has found an ideal environment in the clean and deep waters of the lake.
